This is a great low calorie alternative to the normal stuffed peppers. There is only 280 calories per pepper! And it taste delicious!!!!
- 4 green bell peppers, tops removed and seeded
- 1 pound ground turkey
- 2 tablespoons of olive oil
- 1/2 onion, chopped
- 1 cup sliced mushrooms
- 1 zucchini, chopped
- 1 red bell pepper chopped
- 1 cup of spinach
- 1 (14.5 ounce) diced tomatoes, drained
- 1 tablespoon of tomato paste
- Italian seasoning to taste
- 2 cloves garlic chopped
- salt and pepper
Directions
- Preheat oven to 350 degrees.
- Wrap the green peppers in aluminum foil and place in baking dish. Bake 15 minutes in the preheated oven then remove from heat.
- In a skillet over medium heat, cook turkey until evenly brown and then place aside.
- Heat oil in the skillet and cook garlic until evenly golden brown. The cook onion, mushrooms, zucchini, red bell pepper and spinach until tender. This takes 15 minutes.
- Return the turkey to the skillet and mix in the tomatoes, tomato paste, Italian seasoning, salt and pepper.
- Once all combined stuff the green peppers with the skillet mixture.
- Return peppers to the oven and continue cooking for 15 minutes!
